In “A Hatteras Surprise” from Candy Cane Wishes and Saltwater Dreams, Ben and Ginny help Hazel make her fruitcake. It’s a scene straight from my life because my mother makes two batches every year. Her sister loves these cakes. Here are pictures from our afternoon of fruitcake making this year.
We begin by melting the marshmallows in the condensed milk…slowly so that the concoction doesn’t burn on the bottom of the pan! FYI–we add two bags of marshmallows, 12 ounces each and two cans of condensed milk, 12 ounces each.
Then chop all the nuts together. FYI–the recipe calls for four
cups of nuts, but we added several more cups of walnuts, pecans, and Brazil nuts.
Then mix the graham cracker crumbs with the raisins…both golden and regular. FYI–we used two boxes of crumbs and two boxes of raisins.
Combine the nuts with the graham crumbs and raisins.
Keep checking on the marshmallows and stirring!
Add the maraschino cherry juice from one bottle to the marshmallows and add the chopped up cherries to the nut mixture. Save a few cherries to decorate the top of the cakes.
Then combine all ingredients!
The mixture is hard to stir, so clean hands make the best mixers!
It’s really fun if those hands belong to a strong Army Captain who’s home to help!
Put the mixture into tin loaf pans and refrigerate. The cakes are ready to give away or eat…whichever you prefer!
