In Mars…With Venus Rising, Penn’s aunts, Winnie and Jancie, make their pecan pies with corn syrup. Most Southerners seem to follow suit. Because of all the bad press corn syrup has been receiving lately, I decided to try a different recipe for a family gathering last year.
It was delicious.
If your family is gathering for the big Labor Day weekend coming up, why not try a new take on an old favorite? Here’s the recipe I used:
Ingredients:
1 C brown sugar
¼ C sugar
½ C butter, melted
2 eggs
1 T plain flour
1 T milk
1 t vanilla
1 C chopped pecans
1 9-inch pie crust
Directions:
Beat eggs until foamy. Stir in butter, brown sugar, white sugar, and flour. Mix well. Add the milk, vanilla, and nuts.
Pour mixture into an unbaked 9-inch pie crust. Bake in pre-heated 400-degree oven for ten minutes. Reduce temperature to 350 degrees, and bake for an additional thirty to forty minutes.
Serve warm or room temperature.
Enjoy with or without ice cream!
